My Mom’s Garlic (Lasoon) Chutney

Ingredients

Garlic – 500 grams
-
Cumin seeds – 100 grams
-
Cardamom – about 20 pods
-
Cloves – 10 to 15
-
Black pepper – 10 to 12 seeds
-
Salt – as per taste
-
Red chili powder / Mirchi masala – as per taste

Oil – required amount
Preparation Steps

Lightly dry roast cumin seeds, cardamom, cloves, and black pepper in a pan until aromatic. Keep them aside.

In another pan, heat some oil and fry the garlic slightly until it becomes soft.

Take a mixer grinder.

First add the roasted spices (cumin, cardamom, cloves, pepper) and grind them.

Then add the fried garlic, salt, and chili powder.

Add a little oil (do not add water) and grind everything into a thick chutney paste.
Tempering (Optional – for better taste)
Heat some oil in a pan and add:

Cumin seeds
-
Mustard seeds
-
Dry red chili
-
Turmeric
Pour this tempering (tadka) over the chutney and mix well.
